I know what you’re thinking:
Purple Cauliflower?! This is madness!! Glorious Madness!
And if you aren’t…you should be. Unless you live somewhere having purple cauliflower is like, whatever. But if that is the case, I’d like you to know you’re missing out on a pretty spectacular discovery.
The verdict is in: Purple Cauliflower is better than white, based 99.9% on the fact that it is purple. (Oh how I love Purple!)
But for those of you who are not quite as intrigued by the colour as I, you may want to know that when raw the flavour is slightly spicier than the usual white variety. Think cabbage (hint of). When cooked the colour becomes a darker, more like indigo, and the flavour is pretty much identical to white cauli. (This is based on steaming the cauliflower)
Mmmm purple veggies.
